Brighter Days Ahead Recipe: La Quiche

Here is a suggestion to bring brightness and hope into our lives (and kitchens) during these uncertain times:
Bake!! Get in that kitchen, pull out every pot, pan, and mixing bowl and bake like there’s no tomorrow! Try a new recipe you’ve been eyeing for awhile and give it a whirl! Better yet, find an old favorite and spice it up!
If you have neither, here’s a fun classic from my kitchen:
La Quiche

Recipe serves several – It makes two pies…(If you have a favorite pastry recipe, go ahead and use it! My recipe uses store bought pastry shells - I used to make this often when my girls were younger and we were super busy.)
Ingredients:
½ lb. bacon – cooked and crumbled
4 cups milk – scalded in a pan
6 eggs
½ tsp salt
¼ tsp pepper
Pinch of nutmeg
Sliced mushrooms and onions, sautéed with most moisture gone
1 cup of gruyère cheese, or swiss cheese, plus more if you want…
2 pre-made deep-dish pie crusts
La Recette:
Cook the bacon until well-done; crumble into bits
Pour milk into pan and scald. Leave to cool to room temperature.
When the milk is cool, beat in the six eggs, salt, pepper, and nutmeg.
Sprinkle cheese, bacon, onions, and mushrooms into the bottom of the pre-made pie crusts. Pour egg and milk mixture over top and bake for 35 to 40 minutes at 350 degrees. Let cool and then enjoy!
Substitutions for mushrooms could include broccoli, asparagus, etc…it’s what you like…
